Strawberry Cheese Pie                                       
Ingredients

One 9 inch cookie crust baked and cooled

Cheesecake:

3 oz. cream cheese, room temperature
1/2 cup sugar
1 tsp vanilla
1 tsp lemon juice
1/2 pint whipping cream, whipped


Strawberries:

3 cups strawberries, cut into 4s
1/3 cup sugar
1 1/2 Tbsp cornstarch
1 Tbsp lemon juice
drop of almond extract


Mix the cream cheese and sugar until smooth. Add the vanilla and lemon juice. Fold in the whipped
cream. Spoon into cooled pie shell and smooth. Chill while making strawberry filling.

Mash 1 1/2 cups of the strawberries. Add sugar and cornstarch. Simmer over medium heat until
thick and clear, about 3 to 5 minutes. Add lemon juice. Let cool.
Add remaining cut up berries and spoon onto cream cheese filling. Chill overnight before serving.
