Passionfruit is an ugly little critter. Its all brown and wrinkly on the outside, like a South
Florida retiree. However, the inside is filled with a lovely perfumed pulp that makes a tasty
dessert addition.
I know, its not classic cheesecake, but really, who has a springform pan on a boat?
Boat Passionfruit Cheesecake Printer Friendly Version
1 baked cookie pie crust (I use melted butter and whatever cookies are hanging
about begging to be crushed.)
3 oz cream cheese
1/2 c sugar
1 tsp vanilla
the pulp of one passionfruit after being pushed through a sieve
1/2 pint whipping cream
Topping:
the pulp of one passionfruit
1/2 c water
1/4 c sugar
2 tsp cornstarch
Mix cream cheese, sugar, vanilla and passionfruit pulp. Whip cream to soft
peaks. Fold together. Place in baked and cooled shell. Chill for 4 hours.
For the topping, mix all in a non-reactive pan. Heat to boiling and thick. Let cool.
Spread over top of the chilled cheesecake.
