| Cream Cheese Cake with Strawberries Strawberries: 2 pints strawberries, sliced granulated sugar to taste Toss together the sugar and berries, let sit at room temperature until serving time. Whipped Cream: 1 pint whipping cream 1 tsp vanilla granulated sugar to taste ( 2-3 Tbsp.) Mix all together, whip until soft peaks form. Cake: Greased and floured bunt pan ( I use the silicon bundt pan that doesn't require greasing.) 350 degrees 1/2 cup butter, room temp 8 oz cream cheese, room temp 1 1/4 cup sugar 2 eggs, room temp. 1 tsp vanilla 1/4 tsp almond extract 1/2 cup milk 2 cups flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt zest of one lemon Sift together the dry ingredients. Cream together the butter and cheese with the sugar until fluffy. Add in the eggs, extracts and lemon zest. Stir the dry into the wet ingrediets. Scrape batter into the prepared pan. Bake for 40 min or so until a toothpick comes out clean. Let cake sit for 10 min in the mold, then, flip out onto a cooling rack and let cool. To serve, slice cake, pour strawberries on top with whipped cream. |
