Cornbread                                                                        
9 x 9 greased square pan
425 F                                                                       

Dry
1 1/4 cup flour
1 cup cornmeal
2 Tbsp sugar
1 3/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt

Wet
1 3/4 cup sour milk something (yogurt, sour cream, buttermilk, whatever)
2 large eggs, room temperature
1/4 cup butter, melted and cooled slightly


Sift together the dry ingredients. Mix together the wet ingredients (I do this in a 2
cup wet measuring cup to save dish use).

Quickly add the wet to the dry. Spread into the pan.

Bake until lightly gold on top- about 25 minutes.
