Carambola Upside Down Cake                 

350F oven
9 inch cake pan

Ingredients

3 carambola, sliced
1/4 cup butter melted
2/3 cup brown sugar
juice of 1 lime

1/2 cup butter, soft
1 c sugar
2 eggs
1 1/2 cup flour
1 1/2 tsp baking powder
pinch salt
1/2 cup milk
1 tsp vanilla
1 tsp almond extract


Place carambola slices in the bottom of the pan. Mix butter, brown sugar and juice. Pour over slices.

Cream butter and sugar. Add eggs. Mix dry ingredients. Add to butter mix alternately with the milk. Stir in the
extracts.

Pour over slices. Bake approximately 30 min.

Cool in pan for 15 min. then flip onto platter, slices side up.
